We usually use tender steak cut like sirloin, tenderloin, rib-eye for this recipe. Rump steak, flank, or flat iron steak goes well too. Season the steak slices with soy sauce, baking soda, corn starch, and sesame oil.

It's a Chinese method of meat velveting and you can use this method in chicken too. Baking soda and corn starch in the marinade keep the beef juicy and tender when you stir fry with high heat.

How to cut the steak to achieve the tender result?Check the direction of the meat grain direction first, then cut against the grain into thin slices.

Stir Fry Sauce

To create a perfectly balanced savoury stir fry sauce, you will need oyster sauce, light soy sauce, dark soy sauce, vinegar, sugar, corn starch, and water. And of course, the main ingredient, a freshly ground black pepper. All of these sauces are available in most supermarket Asian aisle and Amazon online.

This sauce is very similar to most Chinese stir fry sauces and you can add it to any of your favorite stir-fry dishes like noodles, meat, or vegetables.

You can make this stir fry sauce in a large badge and store it in air-tight jars and keep it in the fridge. It usually lasts in the fridge for up to 7 days. This homemade sauce mixture tastes better than any readymade stir fry sauces!

Vegetables You Can Add

Bell peppers and onions are ideal for this recipe, just like the Chinese takeaways and restaurants recipes. But you can use any of your favourite stir fry vegetables like carrots, mushrooms, snow peas, bamboo shoots, baby corn, etc.

Slice the beef steak into thin slices against the grain. Season the beef with light soy sauce, baking soda, corn starch, and sesame oil. Mix well, set aside, and marinate at least 15 mins.

Finely chop the garlic cloves and cut the onion and bell pepper into thin slices. As this is a very versatile dish, you can add any of your favourite extra stir fry vegetables.

In a small bowl, mix all the stir fry sauce ingredients and set it aside. Use fresh ground black pepper to bring more flavour to the dish.

Heat the pan into high heat, add the marinated beef, flatten and spread the beef in the pan. Let it cook the beef for 2-3 mins until the beef changed into nice charred colour. Then turn sides and stir fry for another 1-2 minutes. Remove from the pan and set aside.

In the remaining oil in the pan, stir fry the chopped garlic for a few seconds. Follow with the onion slices and stir for a few seconds. Then add pepper slices and place beef slices back in.

Pour the sauce mixture in and stir well to combine all ingredients evenly. Continue to cook for another 1-2 mins until the sauce becomes thick and glossy.

Turn off the heat and transfer to serving plate. Serve immediately!

  • 250 g Beef steak Ribeye/rump/sirloin/tenderloin steak
  • ½ Large sweet onion
  • 3 cloves Garlic
  • ½ Bell pepper red
  • ½ Bell pepper green
  • 2 tbsp Vegetable oil

Beef Marinade

  • 1 tsp Light soy sauce
  • 1 tsp Sesame oil
  • 1 tsp Potato/corn flour ( starch )
  • ¼ tsp Baking soda

Stir Fry Sauce

  • 2 tbsp Oyster sauce
  • 1 tbsp Light soy sauce
  • ½ tsp Dark soy sauce
  • 1 tsp Sugar
  • ½ tsp Black pepper
  • 1 tbsp Rice vinegar
  • ½ tsp Corn/Potato flour (starch)
  • 3 tbsp Water

Instructions

  • Cut the beef steak into thin slices. Put the sliced beef into a mixing bowl and add ingredients from beef marinade. Mix well, set aside and marinate at least 15 mins.

  • Finely chop the garlic. Cut the onion and bell pepper into thin slices.

  • In a small bowl, mix all the stir fry sauce ingredients. Set aside.

  • Heat the pan into high heat, add the marinated beef, flatten and spread the beef in the pan. Let it cook the beef for 2-3 mins untill the beef gets a nice charred colour and turn sides. Stir fry for another 1-2 minutes. Remove from the pan and set aside.

  • In the remaining oil, stir fry the garlic for a few seconds. Then add the onion slices and stir for a few seconds. Add pepper slices, add beef slices back in.

  • Pour the sauce mixture in. Mix all the ingredients well with the sauce until well combined. Stir fry for about 1-2 mins until the sauce becomes thick and glossy.

  • Transfer to serving plate. Serve immediately.

  • Perfect with a bowl of steamed rice or stir fry noodle.
