Cauliflower rice – you either love it or you hate it. Okay, I’m being dramatic, but it’s kind of true!

I personally don’t mind cauliflower rice. It’s not real white rice, but it does the job most of the time. Michael on the other hand, he could do without it.But the thing is, it’s a great option for most people. If you are looking to eat lower carb, if you paleo or are doing a Whole30, trying out a keto diet (not my thing, but it might be for some), or just want to eat more veggies. Cauliflower rice is a great way to do all of that. So today I’m bringing you 6 new Whole30 cauliflower rice recipes to spice things up!

Before we get into the recipes, let’s talk about some of the basics of making cauliflower rice.

How to make Cauliflower Rice

While you can get store bought cauliflower rice at most places now-a-days, making it at home is quite easy (yet can be messy). All you need to do is roughly chop up a head of cauliflower and put it in your food processor.

It will probably need to be made in a few batches, but just add the cauliflower florets until it is about 3/4 the way full. Pulse the cauliflower until it is broken down into a rice like consistency. I do this in 1 second pulses to make sure it doesn’t blend down too much. If there are any large pieces, pull them out and do them in the next batch.

One large head of cauliflower makes about 6-7 cups of rice! It can be a lot cheaper than buyer it from the store! If you have more than you think you will be able to use, just freeze some in a bag for future use!

Fresh vs Frozen Cauliflower Rice

There are a lot of times where making cauliflower rice isn’t an option though. To be honest, I never make it and always use store bought. It is just one of those convenience things that I would rather spend my time elsewhere than making cauliflower rice.

When buying it from the store, I always opt for fresh. I find it just does so much better in recipes – it is more firm, doesn’t get as soggy, and I like the taste and texture better. I like using frozen cauliflower rice to add in smoothies. If you can find fresh at the store, I would go with that!

How to avoid soggy Cauliflower Rice

This goes off what I just said above, but I suggest using fresh if you can! Frozen has some liquid in it and can just make your rice or dishes a little soggy.

If you are using frozen, I would make sure you turn your heat up to high when you are sautéing, that way some of the liquid can evaporate. Also make sure you have enough cooking fat in your pan (at least a tablespoon). Since the heat is on high, make sure you stir it pretty often so it doesn’t burn.

6 Whole30 Cauliflower Rice Recipes

Now let’s get into the recipes!! Each one has a main base of cauliflower rice and a few other add-ins to pump up the flavor. Here are the kinds we are making and what they can be paired with:

Fajita – sautéed up with some onion, peppers, and taco seasoning! Great to serve alongside some Mexican food or tacos – shrimp fajitas, steak fajita lettuce wraps, and shrimp tacos.

Cheesy Bacon – bacon is fried up and then the cauliflower rice is sautéed in that. The addition of nutritional yeast gives it a cheesy taste without actual cheese! Goes great with just about anything, but chicken burgers, BBQ chicken sweet potatoes, or turkey ranch casserole sound pretty tasty!

Green Goddess – cauliflower rice mixed up with fresh parsley, dill, chives, and basil. Finished off with some lemon juice for a bright and super refreshing side. This would go great in a salad, alongside some lemon pepper chicken, and grilled sweet potatoes.

Coconut Curry – coconut milk, curry powder, and curry paste to give you a nice kick with your cauliflower rice. I love this one so much! Would be great with ginger lime chicken thighs or curry salmon cakes.

Scallion and Mushroom – a fun Asian twist. The addition of mushrooms, scallions, coconut aminos, and lime juice make a great savory side. It would go perfectly as a side to beef and broccoli!

Cilantro Lime – a classic, but so good! Just cilantro and lime mixed with the cauliflower rice. I use this in in my fish taco bowls and it would go great with this beef taco casserole.

Each recipe only serves 2, so feel free to double or triple it. They store well in the fridge for up to a week and would be great for meal prep. You could make a couple on Sunday to have on hand throughout the week. You could also make a double batch and freeze it. Just defrost in the freezer and add about a tablespoon of oil in a pan to heat them up.

So whether you are team cauliflower rice or not, these Whole30 cauliflower rice recipes will sure shake up your typical cauliflower rice routine and add some spice to meal time!

FAQs

How do you make cauliflower rice not soggy? ›

Easy DIY Raw Cauliflower Rice Recipe (That's Not Mushy!)

In a food processor, add the cauliflower florets and pulse for 30-60 seconds. Add 2-3 cups at a time and remove as it is riced. This will prevent the cauliflower from being over-processed. With a towel, pat dry or squeeze the liquid out from the cauliflower.

Why is my cauliflower rice so mushy? ›

Leave riced cauliflower on the heat too long and it will become soft and soggy. Follow this tip: Quickly cooked in a little butter or olive oil on the stovetop, riced cauliflower becomes softer and more tender. As a rule of thumb, about three minutes over medium heat and not too oil much should do the trick.

How do you get moisture out of cauliflower rice? ›

One additional step I like is to press any excess moisture from the rice by transferring the cauliflower rice to a large paper towel or absorbent dish towel and squeeze/press to remove any remaining water. This ensures no excess moisture remains, which can make your dish soggy.

What is a Whole30 rice substitute? ›

Frozen or Fresh Riced Cauliflower

We can't emphasize this enough — a bag of cauliflower rice should be a staple in your freezer or fridge, especially during the Whole30. Mix it with veggies and top with a protein, and you've got a hearty meal.

Is cauliflower rice good for weight loss? ›

Cauliflower has several properties that may help with weight loss. First, it is low in calories with only 27 calories per cup (107 g), so you can eat a lot of it without significantly increasing your calorie intake ( 1 ). It can also serve as a low calorie substitute for high calorie foods, such as rice and flour.

How do you thicken riced cauliflower? ›

The key to a thicker consistency is to drain the steamed cauliflower really well before pureeing or blending it up. Put the puree back into the warm pan and add grated cheese. Stir until the cheese is melted and you should have a nice, thick texture. You can also add a keto thickener like glucomannan or xanthan gum.

Why does cauliflower rice hurt my stomach? ›

Cauliflower provides essential vitamins, minerals and nutrients, but it can also cause stomachaches or abdominal cramps. The culprit behind the stomachaches is cauliflower's fiber content, which becomes most troublesome when you increase your fiber intake too rapidly without giving your body time to adjust.

Why does cauliflower rice make me bloated? ›

The reason for this is that cauliflower, as well as other cruciferous veggies, such as kale and broccoli, contains raffinose and other oligosaccharides. These are specific types of sugars that remain undigested until bacteria in the gut ferment them, producing gas, and, in turn, causing bloating and gas.

Can you overcook cauliflower rice? ›

Why is my cauliflower rice soggy? The key to preventing soggy cauliflower rice is making sure you don't overcook it. Once the 'grains' are hot, you're ready to serve. The best cooking method to avoid any sogginess is to roast the cauliflower grains on a wide, shallow tray.

Why does my cauliflower rice smell? ›

Cauliflower, like all cruciferous vegetables (cabbages, mustard, broccoli, etc.) contains sulfur compounds which will begin to smell when the vegetable is overcooked. Blanching, roasting or steaming just until the cauliflower is fork tender will keep it from smelling up your kitchen.

Why is my cauliflower rice brown? ›

Cauliflower can develop brown spots due to oxidation, a chemical reaction from prolonged exposure to light and air. But don't fret, you can still make easy cauliflower recipes and your dinner isn't necessarily ruined.

What's the best way to dry out cauliflower? ›

Arrange blanched cauliflower in single layers on drying trays. Dry at 140 degrees F (60°C) in an oven or dehydrator. If necessary, turn large pieces over every 3 to 4 hours during the drying period. Vegetables can scorch easily toward the end of drying, so monitor more closely as drying nears completion.

Why is quinoa not allowed on Whole30? ›

Quinoa falls into the category of plants that we call pseudo-cereals. These products are not botanically grains, but contain compounds that may cause similar issues in sensitive individuals, so they are not compatible with the Plant-Based Whole30. (See also “amaranth” and “buckwheat.”)

Why are potatoes allowed on Whole30? ›

Potatoes of all varieties are real, nutrient-dense foods. (It's a myth that all white foods are nutritionally barren.) The original exclusion of white potatoes was pretty arbitrary on our end—which we fully admitted in the Whole30 program rules.

Why are white potatoes allowed on Whole30? ›

The discussion of white potatoes began about a year ago amongst our team and valued advisors, and the debate raged hard and long. White potatoes are a whole, real, nutrient-dense food! It doesn't make logical sense to leave them out while other carb-dense foods like taro, yuca, or sweet potato are allowed.

What is the remedy for soggy rice? ›

Another easy way to fix sticky and soggy rice is by spreading them over a parchment paper and heating/baking them for 10-15 minutes at 200 degree celsius, this will extract the excess moisture from the rice and give a perfect texture to the rice.

How do you fix soggy rice when cooking? ›

Rather than draining the excess water from your rice, if it's a manageable amount, put a piece of stale bread on top of the rice, cover the pot, and allow it to continue cooking on low heat. After a few minutes, the bread should absorb the moisture in the pot.
