If you eat gluten free, you really must have a good recipe for gluten free pancakes in your arsenal. Pancakes are a favorite Saturday breakfast in our house, and we often serve them for dinner, too!

We have spent the past several years developing this recipe for perfectly fluffy gluten free pancakes. We are excited to share this updated recipe with step-by-step instructions and pictures along with frequently asked questions to help you make the fluffiest gluten free pancakes!

How to make gluten free pancakes:

I’m a believer in simple, one-bowl recipes, and these pancakes are great that way! Just stir all the wet ingredients together, toss in the dry, whisk, and cook.

There’s just one thing you need to know: The gluten free flour you useand how you measure it is important! I have tested this recipe with Bob’s Red Mill 1:1 and it works splendidly. Bob’s is an inexpensive flour, which is a definite bonus! I have also tried this recipe with my regular go-to, Better Batter, and it didn’t work so well so I highly recommend Bob’s 1:1.

The pancake batter should be thin enough to pour out of a measuring cup, slightly thicker than the consistency of buttermilk. If it seems too thick, add a splash of milk. Too thin, add a tablespoon of flour.

It is important to measure gluten free flour using the stir, scoop and level method. This ensures that you don’t use too much flour and thus end up with gritty and/or dense food, which nobody wants!

How to measure gluten free flour:

  1. Stir the flour.
  2. Scoop flour into a measuring cup, being careful not to pack it down.
  3. Level off with flat side of a knife or spoon.
  4. Pour into bowl.

Preheat a griddle (or nonstick pan) to 325 F. Once it’s preheated, you can add the batter right onto the griddle using a measuring cup. Use a 1/4 cup size for small, toddle-sized pancakes, 1/3 cup for kid-size, and 1/2 cup for a larger pancake. This gluten free pancake recipe makes about 12 medium-sized pancakes.

Gluten free pancakes are SO easy to make, and you can serve them any way you like. Top with the traditional dollop of butter and some maple syrup, make our favorite homemade Buttermilk Syrup, or get all fancy and serve a pancake bar with a variety of toppings! Here are some ideas:

Gluten Free Pancake Bar Ideas:

Gluten free flours vary from brand to brand. This recipe was tested with Bob's Red Mill 1:1 which you can find in most grocery stores or online. While I love Better Batter flour, it did not work well in this recipe.

FAQs

Can gluten free pancakes be fluffy? ›

The key to perfectly thick, fluffy gluten free buttermilk pancakes is getting your pancake batter consistency just right. Too runny and you'll end up with something that more closely resembles French crêpes – they will spread out too much in the pan and they'll be too thin and not as fluffy as you'd like.

What makes pancakes fluffy and helps them rise? ›

Pancakes and waffles typically both contain baking soda, which causes them to rise. As soon as the baking soda is combined with the wet ingredients (which contain an acidic ingredient, like often buttermilk), it starts producing carbon dioxide gas bubbles that cause the batter to rise.

Does Fluffy Fluffy do gluten-free? ›

Mixing the light texture of souffle with the richness of a classic cheesecake, these heavenly new desserts are also the brand's first gluten free item.

What is the fluffiest gluten-free flour? ›

Almond Flour

This is why it has a fluffy, light texture and pale golden color. We often reach for almond flour in baking recipes when we're looking for a light, fluffy, cake-y texture with neutral flavor, because almond flour has a milder flavor than almond meal, and tends to fluff up nicely when baked!

What makes fluffier pancakes milk or water? ›

I always use whole milk instead of water. It makes the pancakes more fluffy and more delicious. Sometimes, I use all-purpose cream when I ran out of whole milk.

Will baking powder make pancakes more fluffy? ›

Baking powder, like baking soda, is a chemical leavening agent made with sodium bicarbonate (aka baking soda) plus a weak acid, such as potassium bitartrate. Baking soda is essential for baked goods, but baking powder is really what makes pancakes and biscuits rise and become so super fluffy.

What ingredient in a basic made from scratch pancake batter makes pancakes fluffy? ›

Air! The combination of homemade buttermilk (milk and vinegar) and two leaveners (baking powder and baking soda) create lots of air bubbles in the pancake batter, resulting in the lightest and fluffiest pancakes imaginable.

Why are my pancakes not light and fluffy? ›

IT'S ALL ABOUT THE EGGS! The number one secret to getting fluffy, thick pancakes every time is to SEPARATE the egg yolks from the egg whites. Use gluten-free pancake mix or a low protein biscuit flour instead of “all purpose” flour.

What is the most important ingredient in pancakes? ›

Flour is the main ingredient to any pancake. It provides the structure. Different types of flours alter the structure because some flours absorb more moisture or create more gluten (which binds the structure together) than others.

Why are my pancakes flat and not fluffy? ›

Why are my pancakes flat and not fluffy? A flat pancake is usually the result of the batter being too wet. This is because there isn't enough strength from the flour to trap the bubbles produced by the baking soda.

What's the big deal with gluten-free? ›

Gluten is a protein found in certain grains, such as wheat, barley, rye, and a cross between wheat and rye called triticale. A gluten-free diet helps manage symptoms of celiac disease and other medical conditions associated with gluten consumption.

Is Cool Whip gluten-free celiac? ›

The good news for Cool Whip fans is that, currently, Kraft Cool Whip products are gluten-free, including the flavored "Season's Delight" varieties. As such, Cool Whip is regarded as safe for people with celiac disease.

What thickeners contain gluten? ›

For example, modified starch thickener can be made from wheat or maize. If made from wheat, the ingredient may be listed as 'modified starch thickener (from wheat)'. This product is not gluten free and should be avoided. Modified starch thickener made from maize will be listed simply as 'modified starch thickener'.

Why are gluten-free cakes so dense? ›

If gluten-free cakes aren't falling apart, they often turn out heavy and unpleasantly dense. That's because gluten creates little pockets of air, so baked goods turn out springy and fluffy; gluten-free flours and grains are lacking this crucial element.

Does gluten-free pancake mix taste different? ›

Do gluten-free pancakes taste different? A really good gluten-free mix that purports to be similar to all-purpose flour won't taste a great deal different from regular pancakes. The texture might be a bit finer, and the taste might be lighter.

Why are gluten-free pancakes grainy? ›

Gluten-free baked goods have earned the reputation of being dry and gritty. That grit—that evil grit! —is the result of gluten-free flours that are often high in starches and rice flour, which take longer to absorb moisture than regular “gluten” flour.

Why are my gluten-free pancakes chewy? ›

This gluten-free pancake recipe will turn out chewy if the egg whites have not whipped long enough or the batter was overmixed. Since the pancakes rely on the egg whites for their light and fluffy texture it is important to carefully fold the egg whites into the gluten-free pancake batter.
