How to Make Tex-Mex Chicken Tacos in a Slow Cooker

I must confess… in the last month… I have made this recipe no less than 5 times. It is safe to say, I think these Crock Pot Tex Mex Chicken Tacos are crazy good. Also? This is one of my favorite kind of recipes… dump and go. You simply must try it. Do not pass go. Do not collect $200. 😉
Crock Pot Tex Mex Chicken Tacos: A Few Notes
- I regularly use raw chicken breasts in this recipe, however, when I am in a time crunch, I throw in pre-cooked frozen grilled chicken breast strips instead and the dish will be ready in 1-2 hours.
- I like to use a can of northern beans and a can of black beans, but you could use any kind of beans you like.
- We love to use the mini and regular size soft taco boats, but we have also just thrown this on regular flour tortillas or nachos. It would also make great quesadillas.
- This recipe typically takes 3-4 hours on high. You will know it is done when the chicken easily pulls apart using two forks. If the chicken is tough, cook a little longer.
- I have used everything from my 4 qt slow cooker to my 6 qt wifi crock potto make this recipe. However, as always, please make sure that the first time you try this recipe when you have time to adjust the time for your unit.

Ingredients
- 4 lb Chicken Breasts
- 16 oz Salsa
- 15 oz Northern Beans Drained and Rinsed
- 15 oz Black Beans Drained and Rinsed
- 11 oz Mexi-Corn Drained and Rinsed
- 1 oz Taco Seasoning or 4 Homemade Taco Seasoning
- Serve with Taco Boats or Tortillas and Shredded Cheese
Instructions
Place chicken in the bottom of your slow cooker.
Add remaining ingredients and toss well.
Cook on high for 3-4 hours or until chicken easily pulls apart with two forks.
Shred meat and stir well.
Serve with Taco Boatsor Tortillas and Shredded Cheese

I gave it 5 stars even though I haven’t made it as of this posting. The ingredients are the reason. It’ll be great to make when my sons come to stay for a few days.Reading the recipe & directions wouldn’t be easier to mix all the ingredients minus the chicken in a bowl then pour over the chicken. I know you’ll dirty a bowl but all the ingredients will be blended better & then pour over the chicken.

Yum your Tex-Mex Slow Cooker recipe is our short list for a “must make” recipe. Living here in Arizona, I must admit we are big on Mexican food, but I had to look up Taco Boats (never seen them before in over 60 years in Arizona). I will give them a try if I can find them.
I looked at your WiFi 6 quart cooker on Amazon, Wow!!! Isn’t technology wonderful ? Since you make a hobby / living out of slow cooking, I can see why you want the best slow cooker on the market !! I have a 6 quart (which is sometimes too big, so I bought a small 2 quart slow cooker. Love the 2 quart, perfect for a couple of servings. My slow cookers date back to the “caveman” days 🙂 (Although the 6 quart is at least
digital).I do a lot solar with my several solar ovens, Sun Oven brand (quasi-slow cooker) because of all the Sun we have here. I use a nearly 100 year old Griswold 1920’s Tite-Top No 8 cast iron and it works great and it is free. Also I have many Polish made ceramic oven cookware, very attractive and durable. Also use ceramic (Boston bean pots (1,2,and 3 quart size). Both work like slow cooker
We love your website and I think my Christmas present may be one or more of your cookbooks. I guess I need to be patient to see what Santa brings.
